This week we're making Rhubarb muffins and something like Nutella, but healthy!

This week we're making Rhubarb muffins and something like Nutella, but healthy! It's warm and sort of sunny here in Stroud and rhubarb is in season: no better time to whip up something with this garden miracle. LOOSE has all the organic dry ingredients you need for these summer babies.

Here are some new Rhubarb Muffins with Lemon and Vanilla that are gluten-free and vegan! Oh, and delicious and nutritious.

LOOSE has a whole lot of the ingredients you need to whip up these summertime babies: almond meal (ground almonds), brown rice flour, buckwheat flour, coconut sugar, linseeds, bicarb. Or to make things even fluffier you can use a gluten-free flour mix

Also, last week I had a go at experimenting with a Carob Not-Ella recipe that I used to make some years ago, using powdered carob, which LOOSE don't have at the moment, but you can use cocoa powder instead. For this recipe you can find hulled hemp seeds and sunflower seeds at LOOSE and make your very own version of Nutella (that naughty stuff), but yours will be healthy!

Here is the original blog post of the Carob Not-Ella recipe.

Have a wonderful summer week in Stroud,
